I have eaten at Wiley%26#39;s for 3 weekends in a row, with tonight as the latest experience.
The ribs and chicken are the finest I have ever tasted, and I%26#39;ve eaten BBQ in places both high and low, dives to famous restaurants. Johnny Harris%26#39; cannot smoke ribs as fine as Wiley%26#39;s.
Brisket is new to Savannah. It%26#39;s an acquired taste -- BBQ beef -- but I prefer pork. I%26#39;m glad Wiley%26#39;s is serving brisket as it gives us Savannahians something new and different.
Sausage: I love it! It%26#39;s hard to screw up good sausage. Leftovers make an excellent breakfast.
My concerns are the sides. They are lacking in flavor and seasoning. If the BBQ wasn%26#39;t so good, the sides would spoil the meal.
Green beans: Tried them twice. Bright green in color, but no seasoning or salt. Frozen from and bag, thrown into boiling water and allowed to overcook to limpness.
The salt I added at the table still didn%26#39;t improve the green beans. Won%26#39;t order these again.
Cole slaw: again, a watered-down vinegar toss. Needs a lot of help.
Baked beans: I tasted Liquid Smoke, a poor cook%26#39;s shortcut. You can%26#39;t ruin baked beans but you can surely doctor them up. Martha Nesbitt%26#39;s first Savannah cookbook has the most delicious baked bean recipe. I urge Wiley%26#39;s to use the recipe Martha published.
Macaroni and cheese: Dry and bland, three times lacking in salt.
Sweet potato casserole: a winner here. Don%26#39;t change it. Sweet enough for dessert.
Onion rings: The coating is too hard and even in appearance, which makes me suspect they%26#39;re frozen. More batter than onion. They look like the ones you get at Burger King, only larger.
Williams%26#39; Seafood Restaurant (RIP) had the best O Rings on the face of the earth. If Wiley%26#39;s could replicate that taste, O rings would be a winning side.
Dessert: banana pudding: a microscopic sample at a high price ($4). Tasty but why such a tiny portion? It%26#39;s a cheap (inexpensive) recipe.
Bread pudding: a yum here.
Wiley%26#39;s is too cramped/crowded for my personal comfort so from now on, I%26#39;ll get takeouts. I would like to order sides again, but not if the quality remains sub-par for such a promising eatery. They need a lot of improvement.
